| Last night I woke up because Corbin sounded a little funny, and I asked Clark to check on him to make sure that the blanket wasn't covering his face. So, Clark went over and Corbin had rolled over onto his stomach! He was still fast asleep, so Clark rolled him back onto his back. I just can't believe that he rolled onto his stomach, while he was asleep, and completely swaddled! |

Ole!
I found this recipe online yesterday. I was looking for a way to use up some of our flour tortillas before they went bad. This recipe was really good, and it was really easy to make. I highly recommend. I cut the butter in half, and I also added some canned corn to my pizza.
Mexican Tortilla Pizza
Ingredients:
1 can (10 ounces) chunk white chicken in water (drained)
1 can (14 ounces) diced tomatoes and green chiles
1/2 teaspoon garlic powder
1 can refried beans
1 tablespoon butter
4 six-inch flour tortillas
1/2 cup Monterrey Jack cheese (shredded)
1/2 cup cheddar cheese (shredded)
black olives (sliced)
Directions:
Preheat oven to broil.
Combine chicken, tomatoes and green chiles and garlic powder in a small bowl.
Mix well and set to the side.
In a small saucepan, combine beans with 1 tablespoon butter.
Heat on medium until hot, stirring occassionally.
Cover baking sheet with aluminum foil.
Place tortillas on baking sheet.
Broil tortillas one minute per side until crisp.
Remove tortillas from oven.
Decrease oven temperature to 350 degrees F.
Spread bean mixture on each tortilla
Spoon chicken on top of beans.
Top with both kinds of cheese.
Garnish with black olives, if desired.
Bake five minutes or until cheese is melted.

I got in!!!!
I am so excited, I got accepted to be on the panel for an online survey company called Pinecone Research. They are one of the most exclusive/highest quality survey company on the web. They pay $3 for every survey you complete - it used to be $5, but they lowered the price :( It is really hard to get into their company because you can't just sign up on their website. You have to find one of their banners (advertisements), and they can be anywhere online. I finally found one, applied, and they accepted me! This is by no means a huge money-maker. I will probably only get about a survey a week to complete. But it is really easy money, and we can use the money for fun stuff like going out to eat, or whatever. Anyways. I am pretty excited.

I rike lice
Last night was a really fun night. We went had dinner with some of Clark's co-workers. One of them was born in Korea, so she made us a whole bunch of Korean dishes (thankfully no kimchee. I have already been tricked into eating that once. And that was one time too many!) She made some Korean lettuce wraps that have rice, sauce and meat inside. She also made some sausage and onions that were very yummy! I think the onions were some of the sweetest that I have tasted. After dinner we watched some of the Rockies game. What a disappointment. Oh well. It was fun while it lasted. I have saved some of the papers that talk about the world series to put in Corbin's time capsule. I think it will be fun for him to look at them down the road a ways.
